½ peeled cucumber chunked
2 cloves of garlic
½ of a jalapeno (or more depending on your taste)
the juice of 2 limes
1 small bunch of cilantro
1 cup mashed avocado
salt to taste
Blend above ingredients until smooth. You can add some water to thin out or some more cucumber. Adjust salt, garlic and jalapeno to taste.
This is a great salad dressing for taco salads but my kids also love it as a dip.
