Super delicious and oil-free hummus to add to your recipe files! You will want to have this one in the fridge all the time to dip your veggies in or top a salad with. A little bit of a kick from the chipotle pepper and some zing from the lime juice. If you like some spice in your life you will love it!
1 can garbanzo beans (drained but save 1/4 cup of the can liquid)
2 tbsp tahini
juice of 1-2 limes (or more depending on your tastes)
1 tsp cumin
2 cloves garlic minced
1 chipotle pepper packed in adobe sauce
2 tsp of the adobe sauce
salt to taste
Put all ingredients (except liquid from garbanzo can) into blender and blend until smooth. Add water to thin out if needed.
Top with a dusting of paprika, some pumpkin seeds (optional). Serve with a side of veggies.
