2 cans of white northern beans (drained and rinsed)
juice of half a lemon
1/2 tsp sea salt
2 large cloves of garlic
1 whole head of roasted garlic (removed from the skin)
Put all ingredients into the blender and blend until smooth. Adjust seasoning if needed. If too thick, add a tsp of water at a time until the consistency you want.
When roasting the garlic- roast more than one head as you can add more to the tip if you want or use it in other recipes. Store leftover roasted garlic in the refrigerator.
Serve with a veggie platter.
