I served this cold but it can be heated up as well. I used no-salt canned beans to make this on the fly but you could use home-made beans if you want.
2 cans lentils
2 cans pinto beans
2 cans black beans
1 can diced fire-roasted tomatoes
2 tbsp good taco seasoning (I used half a packet of Trader Joe Taco Seasoning)
Put all ingredients in a bowl and stir to mix. Serve with a salad, in a burrito or with rice.
I made this for Carson and Minden BRIK orientation. After night one I added more lentils to bowl to extend it and a bit more taco seasoning. It was just as good the seconded night as the first. This would make a great meal prep meal. Can be used in a variety of ways and loaded with fiber!
