I am always looking for ways to sneak veggies into my diet- especially veggies that are not my favorite. I know cauliflower is good for me- but it isn't my favorite, so I look for ways to hide it.
2 cups boiling water
1 cup oats
1 cup cauliflower rice (defrosted)
1/4 pureed pumpkin
2 tbsp chia seeds
1/2 tsp pumpkin pie spice
sweetener of choice (I use monk fruit sweetener)
After water comes to boil add all other ingredients to the pot. Stir, cover, and turn off heat. Let sit for 5 minutes. Top with unsweetened plant-based milk and sweetener of your choice.
