3-4 tbsps of chia seeds
1 cup of plant based milk (my favorite lately is cashew almond milk)
1/2 tsp pure vanilla
Mix all ingredients in a mason jar. Let sit for 5 minutes. Stir well and put in the fridge for 2 hours or overnight. The pudding should not be liquidy, if it isn't thick enough add more chia seeds.
1/2 cup fresh, rip mango diced
Juice of half a lime (optional)
A few mint leaves minced
Mix all ingredients together and let marinate while the chia seed pudding is chilling.
Top chia seed pudding with mango topping and enjoy!
