This recipe surprised me,! No bananas seem blasphemous in a smoothie, but when Coach Nikki tells you no bananas in your smoothies you listen! I drank 1 quart before a 10-mile bike ride yesterday and felt more fueled than I ever have. It makes 1 serving- drink 1 quart before your workout (for me that is breakfast) and save the rest for a snack later. There is literally 1 pound of greens in this smoothie. I weighed it out. There are 26 grams of fiber in this smoothie alone. So if you were to drink this smoothie daily you would be very close to getting in your daily 35 grams of fiber.
You will blend down everything but the berries first. This will give you room to add them in.
1 lb of Power Greens (Costco)
1 whole lemon (cut into quarters, leave on the peel)
1 tbsp chia seeds
1 scoop Vega vanilla protein powder
2 cups of water
Blend this down and then add in:
2 cups of frozen blueberries
Blend until smooth. Drink 1 qt right away. Put the rest in the fridge. It will firm up like a pudding. You could eat with a spoon or add a little bit of water in to thin out.
40 grams of protein, 26 grams of fiber. 540 calories
